1 Onion, sliced |
| 1 clove Garlic, minced |
| 1 cup Rice, uncooked |
| 1 cup tomato ketchup |
| 1 cup Ham, diced |
| 1 Tomato, cut up |
| 1 Lobster, cooked and removed from its
shell |
| 2 Tbl. Butter |
| 1 Tbl. Vinegar |
| 2 1/4 Cup Water |
| 1/2 Cup Green Bell
Pepper, diced |
| 1/8 tsp. Black Pepper |

|
In large skillet, sauté onion, green pepper, and
garlic in butter until onion is transparent. Stir in ketchup and
remaining ingredients EXCEPT the lobster. Cover and simmer 20 – 25
minutes until rice is tender. Break lobster meat into pieces and add.
Stir occasionally. The original recipe used shrimp instead of lobster.
You may want to substitute half of the green bell pepper with red bell
pepper for color. |
