Favorite Recipes

Everyone has at least one great recipe.  Add yours at the next meeting.

Aunt Catherine's Onion Rings
   3 large onions, peeled, sliced and separated
   1 cup sifted Flour
   1 1/2 tsp Baking Powder
   1/2 tsp Salt
   1 Egg
   2/3 cup Water
   1/2 tblsp Lemon Juice
   1 tblsp Shortening, melted
   Cooking Oil
 
Mix dry ingredients in bowl.  Beat egg and water until frothy, add lemon juice.  Stir dry ingredients into egg mixture and blend.  Stir in melted shortening.  Heat oil.  Dip rings in batter and drop into the hot oil.  2 minutes.  Drain on paper towels.  Keep warm in a slow oven.  Save some for yourself.
 

Lobster Jambalaya

1 Onion, sliced
1 clove Garlic, minced
1 cup Rice, uncooked
1 cup tomato ketchup
1 cup Ham, diced
1 Tomato, cut up
1 Lobster, cooked and removed from its shell
2 Tbl. Butter
1 Tbl. Vinegar
2 1/4 Cup Water
1/2 Cup Green Bell Pepper, diced
1/8 tsp. Black Pepper
 

In large skillet, sauté onion, green pepper, and garlic in butter until onion is transparent.  Stir in ketchup and remaining ingredients EXCEPT the lobster.  Cover and simmer 20 – 25 minutes until rice is tender.  Break lobster meat into pieces and add.  Stir occasionally.  The original recipe used shrimp instead of lobster.  You may want to substitute half of the green bell pepper with red bell pepper for color.

 
John's Lobster Bisque
Crushed shells from four lobsters
4 cups Half and Half
8 Tbls.. Butter
4 Tbls. Flour (sifted)
1 cup Lobster, shredded
1/2 cup Madeira (Dry Sherry can be substituted, but it is a substitute)
1 tsp. Tomato Paste
1/2 tsp. Paprika
1/4 tsp. Thyme
Dash Nutmeg
Salt and Pepper to taste
 
Simmer Half and Half with crushed Lobster Shells and 4 Tbls. Butter for 15 minutes.  Strain, press on shells and reserve liquid.  (May be frozen for future use.)  In heavy pan, melt 4 Tbls. Butter, sprinkle in Flour.  Cook for 5 minutes, stirring so it does NOT brown.  Add Tomato Paste, Paprika, Thyme and Nutmeg.  Whisk in the Half and Half / Lobster shell liquid.  Bring to a boil, stirring to thicken.  Add Madeira and lobster.  Simmer gently for 5 minutes.  You MAy want to add some milk to thin.  Add Salt and Pepper to taste.  I recommend a SMALL bowl.
